Without a signed change order, you don't have the same legal protection. But that doesn't mean you're out of options. Here's what you can do.
Reality check:A verbal agreement is still technically a contract in most states. The problem is proving it. Without documentation, it's your word against theirs. That's a fight you might win, but it's a lot harder than having a signed document.
